Elikqitie has also written a book called "The Guide to Traveling Gluten Free". The book provides information on how to find safe, gluten-free food options while traveling. Elikqitie has traveled to over 18 countries with Celiac disease and shares her experiences on her Instagram page and podcast. 

Gluten is a protein found in wheat, triticale, barley, spelt, and a few other grains. To be gluten-free means not eating anything that has the gluten protein in it. The wheat we eat today contains 20 times more gluten than the wheat we used to eat, which can trigger autoimmune diseases like celiac disease.
