It wasn’t long before he made the move to regional Victoria where he has made a significant influence on the culinary direction in multiple venues. And although running an establishment just over the border in Albury NSW and living in regional Victoria posed huge logistical headaches with the ongoing lockdowns of the pandemic, he found a new, more progress way to run the kitchen.
