He climbed the ranks of Matt Moran’s restaurant group before an opportunity to lead one of Melbourne’s culinary institutions landed at his feet. Now he’s steering the iconic venue into sustainable waters with a strong seafood focus, where work environment is as sustainable as the fish coming in the kitchen back door.
