Perth chef and restaurateur Paul Bentley moved overseas in 1999 and had no plans to return to Australia before the pandemic shut everything down. Now at Si Paradiso and Casa in Perth, he's using everything learnt in a career spanning Europe, New York and Mexico in his menus and approach to training and team-building.
