Growing up in a conservative Mennonite community in rural Canada Patrick Friesen (AppleJack Hospitality) grew up with a plain diet, so he spent a lot of time in the family kitchen trying to make things taste better. It led to a love of food and cooking, and when he stepped into a commercial kitchen he realised not only the potential for a career, but one that could take him around the world. He ended up in Australia, and after some leading roles in some of Sydney’s best restaurants, he’s now running the food program of one of the country’s most dynamic hospitality groups.
