After a 20-year career in the food supply chain, manufacturing and adapting conventional processing techniques, Rosalin Virnik (Anchor Restaurant) felt a desire to embrace a more traditional foods lifestyle and begin to actively seek out quality foods. It lead to discover and befriend the people behind incredible Australian artisan brands, and opening her own food establishments where she now creates menus using their products.
