Bombo Royal Reds are deep-sea prawns caught off the coast of Bombo near Kiama by Frank Musumeci and Better Choice Fisheries. The dish features raw prawns served with a spicy vinaigrette made from habanero, shallot, lime, caraway seeds, Szechuan peppercorn, long pepper and curry leaf.
