98 | Why Eggplant Is the Most Underrated Summer Vegetable for Your Health (And What My Sister's Garden Taught Me)

Episode 98 Published 2 months, 3 weeks ago
Description

Welcome back to Midlife Transformation, Friend!

I want to talk to you today about something a little unexpected — eggplant.

Stay with me. I know it's not the sexiest vegetable in the produce aisle. But I've got two of them sitting on my counter right now, straight from my sister's garden, and it got me thinking.

There's something about food that someone grew for you — with their own hands, in their own dirt — that feels different than anything you'd grab off a shelf. It's provision. It's love, showing up in vegetable form.

These came from my sister and brother-in-law's garden. He spends hours out there, tending it, working the ground — and honestly, every time I eat something from that garden, I think about that. All that quiet, faithful labor, just so someone else can be nourished.

And it turns out, eggplant is doing a lot more for us than we give it credit for.

Here's what's actually in this funny purple vegetable:

It's packed with fiber, which we know supports gut health — and friends, gut health is mood health. It's connected to everything.

The skin is a powerful antioxidant that researchers have linked to brain and heart support. So don't peel it. The good stuff is right there in that deep purple skin.

It's low calorie but high in nutrients — potassium, B vitamins, things that support steady energy. Which, if you're in midlife like me, you know we need all the steady energy we can get.

And here's the deeper thing I keep coming back to. God didn't have to make food that both nourishes us and tastes good. He didn't have to make it beautiful — that deep purple skin, that shape. But He did. That's not an accident. That's generosity.

So today, my encouragement is simple: pay attention to your food. Where it comes from. Who grew it. What it's doing for your body. Let it be an act of gratitude, not just a task to check off.

I'm going to water saute mine tonight. Simple — baja gold sea salt, pepper, maybe a little garlic, and I'm going to think about my brother-in-law's hours out in that garden, my sister tending to the vegetables he brings in from the garden, and how loved I felt holding two eggplants in a grocery bag.

Your transformation is not too late — it's right on time.
