Simple Stove Top Beans

  • Sort through 1 pound of dry pinto beans and remove broken beans or tiny rocks.
  • Rinse well.
  • Cover with several inches of water and soak overnight or 8 to 12 hours.
  • Drain and rinse again.
  • Add beans to a large pot and cover with fresh water by 1 to 2 inches.
  • Bring to a boil, then reduce heat and simmer gently for 1½ to 2 hours until soft.
  • Add more water if needed during cooking.
  • Season near the end of cooking.
