Today’s Happy Hour Special: 🍹 Mango Mojito Mocktail
Recipe by Shivani Loves Food
· 1 ripe mango
· 2 fresh limes
· 2 tablespoons mint leaves
· 3 tablespoons granulated sugar
· 2 cups sparkling water
Instructions:

Prepare the simple syrup: Add 3 tablespoons sugar and 3 tablespoons boiling water to a small saucepan over low-medium heat. Cook until the sugar has dissolved and the syrup is just starting to bubble, stirring frequently. Set aside to cool.

Peel the mango and add the flesh to the jug of a blender. Juice one of the limes and add the juice to the blender.

Blend the mango and lime juice into a smooth puree. You may wish to strain the puree if it has any lumps.

Slice the other lime into wedges and add the wedges to a large jug along with the mint leaves. Use a muddler or the back of a wooden spoon to crush the limes and mint to release their flavors.

Add the mango puree to the jug along with the simple syrup—I recommend starting with a small amount of simple syrup (1 tablespoon) and adding more later if desired.

Top up the jug with sparkling water and give it a stir. Taste the mango mocktail and add more lime, mint or simple syrup if desired.

Serve the mango mojito mocktails over ice and garnished with extra mint and lime. Enjoy!
