Marco shares the story of his family’s journey, starting with his father’s first restaurant in Los Angeles in 1953 and continuing with the founding of Cafe Roma in 1980. We explore their signature dishes, like house-made ravioli and short rib ragu, as well as Marco’s philosophy on curating a wine list that honors both Italian tradition and the local Central Coast wine scene. Marco also shares insights into the diversity of Italian cuisine and why salt water is the secret to perfect pasta.
