I had the pleasure of joining Captain Scott Walker of Into the Blue Television show in his kitchen and he walked me through the way that he cans tuna. He does this so that he uses every bit of the Blackfin Tuna that he catches and nothing goes too waste. There are actually no cans involved. He uses Mason Jars and a pressure cooker to preserve the fish without the need for refrigeration for over a year. This is great for Hurricanes or simply to make sure that you use everything you catch.
