A new cycle is beginning! The end of the calendar year is a wonderful time to reflect on the past year and make magic for the year to come. As we step into the New Year, what do we want to call into our lives? This is a time to move beyond shallow resolutions and intentionally align with our deeper knowing. What must you let go of? What is your soul calling you to create now? This episode offers a winter initiation ritual that will encourage you to connect with your past and present selves in order to light the way for your future self. Start this year from a place of connection and grounding, tune in as we enter these darker months, this is fertile time to uncover a truer version of yourself. Happy New Year!

What’s for dinner?

Winter Salad

1 head kale, shredded

4 cups shredded brussels sprouts

Seeds from 1 pomegranate

1 avocado

1 cup parmesan or goat cheese

1/2 cup pistachios 

Balsamic Dressing 

1/3 cup olive oil

1/4 cup balsamic vinegar

1 tablespoon fig jam

1 tablespoon fresh thyme

2 teaspoons orange zest

Salt and pepper to taste 

Instructions

  • Preheat the oven to 350° F. Line a baking sheet with parchment paper. 
  • On the prepared baking sheet, arrange the brussel sprouts tossed in olive oil, salt and pepper in a single layer. Bake  until crisp. 
  • In a large salad bowl add the kale . Season with salt, pepper, and red pepper flakes. Mix up dressing ingredients, massage into leaves. 
  • Add the pomegranates, cheese, roasted Brussels and pistachios – toss. Top with avocado.

London Fog latte

¾ cup water

2 teaspoons earl grey tea  (or 1 tea bag

¼ teaspoon dried lavender

2 teaspoons brown sugar

1 teaspoon vanilla extract 

¾ cup milk (any kind)

Instructions: Combine tea, lavender buds, and hot water in a teapot. Cover teapot and steep for 5 minutes. While tea is steeping, make the frothed milk. Stir in sugar and vanilla, enjoy!
