Astrid is a French citizen and ethical vegan. As someone who has battled bulimia and as a vegan, she has the noble aspiration of becoming a board certified dietician to help people who are struggling with their eating habits. However, she recently encountered discrimination in the context of her studies, threatening the accomplishment of her dream. But she is fighting back in a lawsuit that could forever change a French Board of Dietitians which is deeply prejudiced against plant-based diets.
