Thirty years ago, chef and restaurateur Peter Conistis started his lifelong project of redefining Greek cuisine for Australia. He’s still going, currently at Ploos and Alpha in Sydney, but with plans to take his modern spin on Greek food around the country. We chat about longevity and energy, the back-and-forth of immigrant cuisines, and dig into the origin story of his famous (scandalous?) moussaka with scallops.
