After humble beginnings to his career in New Zealand, Alan Stuart (Encore by Clare Smyth Sydney) set his sights on working for one of the best chefs on the planet – Gordon Ramsay. It led many years in some of the enigmatic chef’s best restaurants including the mothership Three Michelin Star Restaurant Gordon Ramsay where he fell under the tutelage of Clare Smyth. Many moons later, and he finds himself leading the team at Clare’s first restaurant outside the UK, which has captured the attention of the leading critics.
